Fish Masala
Tender fish in a rich, gently simmered masala.

Pat fish dry and cut into 4 portions. Rub with lemon, half the salt and a little turmeric. Chop onion and tomato; mince ginger and garlic.

Fry onion in oil for 6 minutes. Add ginger, garlic, tomatoes, remaining salt and spices; cook 7–8 minutes until thick. Add water and bring to a gentle simmer.

Nestle fish in the sauce, cover and cook gently for 8–12 minutes depending on thickness, until opaque and flaking. Spoon sauce over rather than stirring vigorously. Finish with coriander.
A little kitchen care
Use a food thermometer: poultry 74°C, ground beef 71°C, fish 63°C. Cook eggs until whites and yolks are firm. Keep raw and ready-to-eat foods separate.
