    Chop tomatoes, mince garlic and half the ginger, and cut the rest of the ginger into fine strips. Heat oil in a wide heavy pan and brown chicken for 7–8 minutes.

    Add minced ginger and garlic for 1 minute. Stir in tomatoes, salt and all ground spices. Cover and simmer 20 minutes, stirring occasionally, until chicken is cooked through. Add a splash of water only if the pan catches.

    Uncover and cook 5–7 minutes until the masala clings to the chicken. Add sliced green chillies, ginger strips and coriander. Serve hot.
