    Cut chicken and peppers into strips. Slice onion, chop tomatoes and mince ginger and garlic. Heat 1 tablespoon oil; stir-fry onion and peppers 3–4 minutes and set aside.

    Add remaining oil and chicken to the pan. Sear 5 minutes. Add ginger, garlic, tomatoes, tomato paste, spices, salt and water; simmer 8–10 minutes until chicken is cooked through.
