Let’s get cooking.

  1. 01

Cut paneer, pepper and onion into chunky pieces. Mix yogurt, minced ginger and garlic, 1 tablespoon oil, lemon, spices and salt. Fold in the pieces and refrigerate 20 minutes.

  2. 02

Thread onto metal skewers, alternating paneer and vegetables. Brush a grill pan with remaining oil and heat to medium-high.

  3. 03

Cook 10–15 minutes, turning gently, until the paneer is hot and lightly charred and vegetables are tender at the edges. Serve immediately.

A little kitchen care

Use a food thermometer: poultry 74°C, ground beef 71°C, fish 63°C. Cook eggs until whites and yolks are firm. Keep raw and ready-to-eat foods separate.
