Chicken Tikka
Boldly spiced bone-in chicken with a roasted finish.

Make shallow cuts in chicken thighs and drumsticks. Mix yogurt, lemon, minced ginger and garlic, oil, spices and salt. Coat chicken well, cover and refrigerate for 2 hours.

Heat the oven to 220°C conventional / 200°C fan. Arrange chicken in a single layer on a lined roasting tray. Discard leftover raw marinade. Roast 35–45 minutes, turning once.

Check that the thickest part away from the bone reaches 74°C. For a charred finish, grill 2–3 minutes under close supervision. Rest 5 minutes before serving.
A little kitchen care
Use a food thermometer: poultry 74°C, ground beef 71°C, fish 63°C. Cook eggs until whites and yolks are firm. Keep raw and ready-to-eat foods separate.
