    Dice potatoes into 1.5 cm cubes. Chop onion and tomatoes; mince ginger and garlic. Brown onion in oil for 7 minutes, then add ginger and garlic for 1 minute.

    Add mince and break it apart over medium-high heat for 6–8 minutes. Add tomatoes, salt and ground spices; stir for 5 minutes.

    Add potatoes and water. Cover and simmer 15–18 minutes until potatoes are tender and mince is fully cooked. Uncover to reduce excess liquid, then finish with coriander.
