    Pat fish dry. Mix yogurt with lemon, minced garlic and ginger, oil, spices and salt. Coat fish and refrigerate for 20 minutes.

    Heat oven to 220°C conventional / 200°C fan. Put fish on a lightly oiled lined tray and roast 12–15 minutes, depending on thickness.

    The centre should reach 63°C and flake easily. For lightly browned edges, grill briefly while watching carefully. Lift with a wide spatula to keep the fillets intact.
