    Cut potatoes into even 1 cm sticks. Soak in cold water 15 minutes, then drain and dry thoroughly. Heat oven to 220°C conventional / 200°C fan.

    Toss with oil and spread in a single layer on a large lined tray. Bake 30–35 minutes, turning halfway, until golden and crisp. Use two trays if crowded.

    Mix chaat masala, paprika, cumin and chilli. Toss with the hot fries and finish with finely chopped coriander. Taste before adding any extra salt.

Use a food thermometer: poultry 74°C, ground beef 71°C, fish 63°C. Cook eggs until whites and yolks are firm. Keep raw and ready-to-eat foods separate.
