    Use chilled ripe mango, yogurt and milk. Put mango, yogurt, milk and cardamom in a blender.

    Blend until very smooth. Taste and add sugar gradually, using less if the mango is already sweet. Blend again briefly.

    Pour into 4 small glasses and top with finely chopped pistachios. Serve cold straight away or keep refrigerated until serving.
