    Slice pitted dates and almonds. Break vermicelli into short lengths. Warm ghee and lightly toast almonds and raisins for 1 minute, then lift out.

    Toast vermicelli in the same pan for 2–3 minutes until lightly golden. Carefully add milk, dates and cardamom. Simmer gently 15–20 minutes, stirring often.

    Add sugar and most of the nuts and raisins. Cook 3–5 minutes until the vermicelli is soft. Top with the reserved garnish and serve warm or promptly chill.
