    Pat prawns dry. Mix oil, lemon, minced garlic and ginger, paprika, chilli, cumin and salt. Toss with prawns and refrigerate 10 minutes.

    Heat a grill pan over medium-high heat. Lay prawns in one layer, working in batches so they sear instead of steam.

    Cook about 2–3 minutes per side until the flesh is pearly, firm and opaque throughout. Sprinkle with chopped coriander and serve promptly.
