    Warm water with sugar and cardamom in a saucepan until the sugar dissolves. Keep hot. Slice almonds.

    Melt ghee in a deep heavy pan. Add semolina and roast over medium-low heat for 8–10 minutes, stirring continuously, until golden and nutty-smelling.
