    Cut potatoes into 1.5 cm cubes and cauliflower into small florets. Chop onion and tomato and grate ginger.

    Fry onion and cumin in oil for 6 minutes. Add ginger, tomato, ground spices and salt and cook 5 minutes. Add potatoes, cauliflower and water.

    Cover and cook gently for 18–22 minutes until vegetables are tender, folding occasionally. Uncover for a few minutes to dry the masala and finish with coriander.
