    Rinse rice and bring to a boil with water and half the salt. Cover, cook on low for 12–15 minutes, then rest 5 minutes. Drain and rinse canned kidney beans.

    Slice chicken, peppers and onion into strips. Toss chicken with spices, minced garlic and remaining salt. Heat oil and stir-fry chicken for 8 minutes, then add peppers and onion for 5–7 minutes until chicken is fully cooked to 74°C.
